Just out of curiosity wanted to try this method. Reversed seared in BGE until IT 120. Then seared in cast iron skillet in Roccbox with temp around 750F for about 12 minutes. Came out good. I guess high heat from top and bottom in Roccbox caramelizes/sears better. Will definitely repeat this combo again.

apologize for not being clear. 12 min--together including onions--first I seared onions and then added lamb chops. So chops might have been there for about 4-5 min. I had to keep them turning every 45 min or so.Bucks County, PA
