    Skip the mustard since the taste is totally wasted.  I use a light spritz of water as the rub binder.   That ol @sgh taught me that. 
    I prefer Apple cider vinegar instead as a spritz for anything pork

    I once did a taste test with myself and friends where I put canola oil, water, mustard and nothing on each slab of ribs along with my rib. Nobody was able to taste any difference whatsoever. 

    Meathead in his columns disputes the values of spritzing ribs believing the spritz cannot possibly penetrate the meat much,, but I personally find the meat is less dry when spritzed.

    No mustard here. If I only want a light coat - I do one light coat. If I want a heavy coat, I will do a really light coat, let it sit for about 20 minutes, then add a second heavy coat, but I never use a separate binder.
