Our Christmas Butt!

greetings friends,

when the family falls in love with your butt, watch out!

this one went in frozen, rubbed in yellow
mustard and San Antonio brisket rub

apple wood and Rockwood at 225*
NO WATER PAN (first time for that one)


took a screencap of the thermoworks SMOKE WiFi. Game changer y’all. I’ll prolly post another thread about it in a bit to get more out of you about it. 

Anyway - pulled off around 195* and pulled after a ten minute rest. 
Was the best one I’ve done so far!
