First Prime Rib

Having never done a prime rib before, I decided to use an Amazing Ribs recipe, which turned out really well. I did the horseradish sauce and the gravy, too. Next time, I will definitely make the gravy ahead of time and let it set up in the fridge, so I can scrape off the fat.
Roast was 4 lbs before cutting off bones and trimming hard fat. Not the best marbling, but on sale for $10/lb. Will likely find one with more marbling next time. Dry brined overnight, used rub as described in recipe. Roasted in LBGE at 225-250*, sitting over CI dutch-oven with gravy in it, until IT of 115*, about 1.5 hrs. Smoked with a bit of cherry chunk. Cranked the egg to ~600* and seared for a few minutes on all sides, until IT ~125*. Plated with rapini and garlic mashed. Enjoy!
