Lahey Pizza Dough with 00

Jim Lahey's no knead pizza dough recipe calls for plain old AP flour. It makes an outstanding pie. But I have 5 lbs of Caputo 00 just sitting around. Gotta try it, right?

Was intrigued by what I read was the favorite pizza topping in Brazil... green peas! So I decided to try that too. This pie started with a couple of garlic cloves run thru a garlic press and mixed in with a tablespoon or two of evoo. Brushed that mixture over the pie, wall to wall. Next up, shredded mozz, then the peas. some spinach I had leftover. a few onion slices, red pepper flakes and some parm-regg.

Baked in my oven on a 1/4" steel. Heated to 550°, then changed to the broiler, preheated a couple of minutes before launch. Took just 3-4 minutes, rotated 3-4 times.

Verdict... not bad. IMO, Lahey's dough is better with 00 than AP. The Brazilians can keep their peas. =) Not bad, but there are sooo many better toppings. One of these days, I'll pick up a round steel that will fit my egg!

    My latest thing is focusing on post bake additions.

    Oh, and as for dyspareunia, I suppose you're right. =)

    @northGAcock, Don't hold your breath, my friend. I've been saying that for a long time now. When I bought the steel, I intended to cut it to fit the egg. That was several years ago and it's still a 14"x17" rectangle. Perfect size for my oven! I decided I would just buy another piece - one for the oven, one for the egg - but haven't done that yet either. :)
