I’ve made chili 100s of times - this is now my go-to method. So good... This was 3 pounds of 85% ground beef, 3 cans of red kidneys, a large can of Red Pack crushed, chili powder, black pepper, salt, some ground chipotle, 2 roasted poblanos. I didn’t bother with diced onion or garlic. The beef was pretty much pulled right from the package and set on the rack over the pot - the finished pot had the right texture.

That looks great. Did you use any smoke? Last time I did that cook, I used hickory, and the smoke was a bit strong for me. SWMBO loved it though. Next time I'm using lump only - no wood chunks/chips.

I hate it when I go to the kitchen for food and all I find are ingredients!
