Brisket cooked like bacon sammy

Had the point left over from a previous cook, so I decided to slice it like thick cut bacon. I put it in the cast iron skillet to cook as I would do my bacon..... 
Pulled out a deli roll, sliced it added some Duke's, end of season tomatoes, and added a thin spread of boursin garlic and herb cheese.
Best. Sandwich. Ever.
Sorry there are no "before" images, just these as I take a few bites.
Brisket was smoked with pecan.....great flavor throughout.

    Ron.....I would so knock that back right now! Brilliant as usual.
    It even sounded like bacon in the CI skillet. I will do this again. When I started slicing the Point, I thought the slices looked similar to thick cut bacon, so I thought "what the hell, why not?" and placed them in the skillet.
    Turns out, you can make brisket bacon....crazy. First bite was so good, I thought I had to share...

    Great time was had by all. Did the Pacific War museum, a couple nights in Austin, did the wine thing in Fredericksburg, BTW, Texas wine does not take a back seat to any wine, anywhere, and we stayed on a huge Ranch outside of Blanco, not too far from Lukenbach.
    We will be doing this trip again.

    You need to try it next time you have some point left over. It's lean to fat ratio mimics bacon, sort of. Worked out pretty well.
