    Wide open until egg is up to temperature, then closed to keep sparks off Azek deck. Does seem to impact temps, though.

    That screen is like a condom. You don't think you ever need it until that one night that you did.

    Put another way... Anybody who cooks with fire on a wooden deck or without the lower vent screen is kidding themselves if they don’t think this is a possibility. 

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Just saw a quote from Aaron Franklin about the fire that closed him down...

    Put another way... Anybody who cooks with fire on a wooden deck or without the lower vent screen is kidding themselves if they don’t think this is a possibility. 
    We'll see if Franklin retrofits screened vents on his restaurant smokers and incorporates them into the ones he will soon be selling to the public.

    Always, even though the egg is on pavers.  I walk around with bare feet, and so do my dogs.  Doesn't seem to affect temps.

    The thing with Franklins type of smokers is that bigass door that has to be opened to work the fire. I have no idea if the sparks that done them in escaped while that door was open while adding/working more sticks or if it just came out thru the vents when the door was closed. One of those concerns is easily remedied, the other, not so much.
