This was a 16-pound Costco Prime brisket, I smoked it at 225 for 23 hours and it turned out like buttah. To fit something of this size on my medium egg I just simply trim enough fat to gently fold it over on top of itself and I always put point over flat to keep the flat out of the Dome heat and keep it moist during the cook so it doesn't dry out , I put this on at 8 p.m. on Friday night and let this thing go all day while I did some carpentry repairs to the outside of my house, when it was finally done I chopped it up and sliced it apart with my dull knives as you can obviously see need sharpening. This turned out juicy moist and delicious just like it should.

Excellent idea and it looks great! Maybe a way to keep the thinnest part of the flat from drying out?
