Dracula Brisket

My oldest daughter danced in a production called Ballet de Dracula this week. I volunteered with the other dads to help load, transport, and build sets as part of the backstage crew. It’s a pretty impressive production. Long story short, there was a show last night then a matinee show this afternoon with a final show tonight. I decided to smoke a brisket for the crew to eat between shows today. 11lb Prime packer from Costco, put on with a simple rub around 1:30am last night when we got home from the cast after party. Thank goodness for Smobot, I was able to rest easy while this thing cooked until early afternoon. Wrapped in parchment paper at 190 IT, then pulled when it was just over 200 IT. Didn’t get many slicing pics as I was in a hurry to get down to the theater. Also threw together a 7 layer dip. All in all everyone was happy with the meal and gave the brisket a good review. Will be a late night tonight as we have to dismantle everything and load out back to the storage facility. Takes two 26 ft U-Hual trucks! Thanks for reading this saga!
