Brisket for Chili

The United Way is the signature charity for my company. We have a chili cook off to kick
off the campaign on Wednesday. I smoked a 10lb brisket today to make my chili. I smoked this with mesquite for 10 hours at 250 and it probed tender at 197. I wrapped it in pink butcher paper at 160. Had to try a few slices, it turned out perfect. Its almost a waste to use this one for chili, oh well its for a good cause. Making the chili tomorrow and will post pics of the finish.     I've never made smoked brisket chili, but man, it sounds great.  Wish I were going to be able to get some of yours.  Looks great so far!

    I would be very tempted to appropriate some of the great looking brisket and substitute a couple of cans of a grocery store filling.  You win with the personal brisket retention and you could still win the cook-off.  Not like your chili is gonna get inspected for authenticity.    ;)

    So Jim, about how much chili will one of those rascals make?
    I get about 4-5 pounds of meat out of that so a double batch of chili.

    That sure looks good Jim, A double batch would be about right for the party. I bet if you vacume sealed and packed in ice it would travel nicely.
