Stuffed Pork Loin

Shelly wanted to try a stuffed pork loin on the new Shirley in preparation for the 2017 Texas BBQ Brethren Bash on 11-11-2017 at Belton Lake. So I fired her up and waited for it to settle in at around 300-310.
She stuffed it a bunch of herbs, garlic and mozzarella cheese. At 5lbs was hoping to be done in about 2.5 - 3 hours.
Took it off at an IT of 140 and let rest for 10 minutes. Then in to a warmed oven till the girls got home. Sliced it and all is good! So tender, moist and full of flavor. Great smoke penetration. We will do this again. See you at the Bash on 11-11-2017!!













This was as good as the ones @SGH made at the first Brisket Camp! Lesson learned from my friend Scotty!
