Electric chafer info/advice needed

I'm poking around the idea of buying one of these guys to provide me with the ability to reheat and serve a brisket (or two) or maybe ribs/whatever, that will be previously smoked, then vac sealed, then refrigerated.

httpsimages-nassl-images-amazoncomimagesI81Q9ZZ7B9fL_SX355_jpg

It's 900w and claims to be able to hit 185 degrees at max setting.

My question is at that temp about how long would it likely take to reheat a full packer to a suitable serving temp? Is this a good solution?

P.S. I don't have access to an oven so that's not an option.

I haven't read the specs on this....but chafers are for holding food....not reheating. I would move forward with caution on this one.

The vac seal and water bath would be a better approach. Perhaps a pot of water over an induction plate would be a better approach.

+1 on the SV for this. I now have a Joule and am a big fan

  • I couldn't resist Amazon's same day delivery so I've been testing that electric chafer out. This thing gets hot. I bet it would get a brisket from fridge to serving temp in an hour or so...and hold it indefinitely.

I preheated it, then added a full size pan filled with a gallon of 50 degree water. It brought the water to 137 in 35 minutes. I need more data points, but so far I'm optimistic.
