Roasted Carrot Soup

Made this soup tonight and it was so good I wanted to share even though nothing was Egg cooked. We were gifted like 6 pounds of garden grown carrots so I had to do something with them. I didn't really like these carrots raw but when roasted they really shine. The fresh ginger really makes this soup pop. But don't overdo it. I used the micro grader to get it minced well. And it didn't take an hour to roast these cause I cut them in smaller chunks. And I didn't simmer for 45 minutes after the roast either. Put the whole pot in the Vitamix for a spin and it was smooth and thick. Good recipe. Will do again for sure.
