Turbo Spare Ribs

Long story short, I wasn't able to get the ribs on the egg until 5pm tonight. In an effort to still eat them for dinner, I cooked the spare ribs at 300 for 30 minutes over a combination of hickory, mesquite and cherry wood. I increased the temp to 350 and let them run for about 1.5 hours. Finally, I sauced the racks and then put them back on the egg at 325 for another 30 minutes. This was the first time I've cooked spare ribs, and I'm amazed at how well they turned out for only cooking about 2.5 hours. Enjoy!

    I egged spares last night myself indirect turbo-wise at 345 and they ROCKED! Turning a time or two and no saucing here. Love that new Peking rub!,
