so I've got the ribs on and they are halfway through. Plans changed and they are going to be done 2-3 hrs before we eat. What is my best strategy here? They are currently an hour into the wrap session of 3-2-1. Should I finish and cooler? Do they need to go into the fridge then reheat? Any help is appreciated.
