Another weird breakfast.

OK, I know I said I would quit posting my weird breakfast concoctions, but some chimed in that they liked them, so here is another.
Some leftover peppers, mushrooms and onions that were prepped on the Blackstone, sauteed in some olive oil then poured some eggs in the pan. Served it with a leftover egged burger and some freshly sliced tomatoes. Very tasty.

If you really want to make that egg concoction over the top....add some fire roasted green chile's. That is a breakfast of champions right there.Ellijay GA with a Medium & MiniMax

Being that I am a non-drinker, it was enjoyed with a Diet Pepsi and cup of coffee. My wife thinks it weird I have Diet Pepsi and coffee both at breakfast. She may be right.The_Stache said:And a Mimosa? -

Best meal of the day.
Looks great. Where do you keep finding these tomatoes? You growing them? Mine keep coming in just kinda "meh"."Brought to you by bourbon, bacon, and a series of questionable life decisions."

Right out of our neighbor's garden. She plants them, grows them, picks them and delivers them. Best tomatoes ever, and there are plenty of them. Great neighbors. I cook them a rack of ribs ever now and then. Ours are OK, but theirs are much better. They are higher up the side of the mountain, so maybe they are closer to the sun.Killit_and_Grillit said:Best meal of the day.

Here is today's version of basically the same thing just plated a little differently and added some salsa. I love a hearty breakfast.
