Brisket Weight Loss

Smoking my first brisket this weekend, a prime 14# packer from Costco. How much mass will the protein lose from the cook? Also, I've seen that most cook on the grid, while several of you cook in a pan. Thoughts?

I'd say 40% +/- total including trimming. You'll probably trim 2lbs of fat so you'll be at 12lbs starting out and will end up in the 8-9lb range after cooking. As far as size is concerned maybe 15-20%. Folks will drape a brisket over a foil wrapped brick if extra room is required. The brick can be pulled in a few hours when the brisket shrinks.

I'm with @GrateEggspectations here. Looking for a weight loss banquet plan involving brisket-maybe next time.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
