Yet Another Tri Tip...
Started the fire at 3pm, put 3 pounder on at 3:40pm with a temp of 225*. At an IT of 115, took it off and reverse seared it. Rested for 5 minutes and we were eating at 5:15pm.

Some may ask why I take it off at an IT of 115*. The answer is very simple - it is just the two of us and we can reheat the "middle" slices on the grill.
Curious as to what temps others like.Michael
