Burgers (smash and regular)

Any day is a great day for burgers, and today was no exception. The order was for smash burgers and regular burgers with onions. Of course once you've made your own hamburger meat there is no going back.
Picked up these at Costco the other day. Used two ribs from the left package and 1 roast from the right. The other meat went into the freezer for next time.

Cubed, put in the freezer for a while.

Used the Kitchenaid meat grinder, which works OK for my use. It only likes semi-frozen meat and no big chunks of hard fat - which is OK as we will see...

Done, looking good!

Smash burgers in top tray, regular on bottom. I don't weight them, not trying to be perfect. That bag at the top smash burger tray, is the fat the Kitchenaid grinder does not like.
Started the smash burgers. Got the pan around 220 on the Mini Max. Used the hard fat from the meat to grease the pan. This small sauce pan works perfectly, making prefect sized burgers.

First one done! Greasing up the pan with more fat. Also the cooked fat is a nice treat for the cook

The plate shot - this one disappeared shortly after. Just like a restaurant where the burger is just thrown on the bun. Grilled the buns on the Large Egg, who is waiting for the regular burgers.

Finished the smash burgers, made 5, each of my sons eat 2 each. Now time to feed myself and the wife (who actually made the hamburger)

Cheesed up a few for now, the others will be re-heated this week. Buns heating up on the Mini Max.

My wife's plate, I don't care for dill pickles. made some potato salad for a side.

If you made it this far, Thanks!! here is a bonus shot. Time to make some more Vanilla Extract. I do not like Vodka, but this is some of the best Vanilla Extract I've ever had - and I like vanilla. We give some away at Christmas in small jars. I got the recipe here. I need to add a few more beans. I'll post some chocolate chip cookies in 8-9 weeks.
