You just have the one Large BGE and the Blackstone?  Hmmm.

My first thought would be to make a ton of pulled pork.  You might have to interlace a few of the butts with the oven, but in principle I think you could cook enough food on your Large, and then maybe supplement with burgers and dogs on your BS.

Agree with JIC. Can fit a lot of pork butts on a Large.

My advice to you, is to start drinking heavily.

Ok, that was an old line from Animal House.  For that size crowd, you can't make multiple items.  You need one or two and that's it.  I would definitely do pulled pork.  That one is a no brainer.  After that, it gets tougher.  I'd lean hot dogs, but wouldn't count out burgers.  If you do burgers, you use the same buns as pulled pork sandwiches.  You're running an assembly line.  You have to keep it simple.  Don't try to do too much.

Also, have you thought about your sides? Chips? Potato salad? Cole Slaw? Baked beans? Mac-n-cheese?

I like the pulled pork idea. Really did not want to do burgers with potato salad. (too normal ) people get " burgered out " after awhile .
I was thinking chips and  mac-n cheese .  I would probably go with some good all beef dogs also , with bacon , peppers , onions and cheese for toppings

This. Have the pulled pork done in advance and then reheat in FS bags. Augment with burgers and dogs on your BS. No sweat.

I concur.  Potato salad and cole slaw won't go over well with the kids.  Chips and Mac-n-cheese go over well with most anybody.  The chips don't have to be cooked, and the mac-n-cheese can be cooked ahead of time and kept warm in the oven.  You can do this.

Now the question is, which sauce or sauces do you offer for the pulled pork? Gotta keep it simple, but kids and adults tend to like different things. I'm thinking two sauce options.  Either sweet option and spicy option, or sweet option and vinegar option.

Sweet sauce for sure. Either vinegar or spicy as an alternative option.

If you have a blackstone, you could do philly cheese steaks. Prep ahead of time....

Prior to servicing time....Cook off the onions and peppers. Then cook off the beef seperatelly....and mix in a deep hotel or foil pans with grated cheese and satued mix. The cheese will melt into the mixture as you stir it in. It will hold up easily for 30 min or more while you cook additional batch(s) if necessary.

To serve, use tongs and fill pre cut hoagies. They can grab a bag of chips and a bottled water or soda etc.
