Egg "sweats"?

something that seems weird keeps happening.  Whenever I heat the egg to ~450 the exterior of the dome begins to "sweat" or lots of condensation begins collecting on the dome.  My knowledge of thermodynamics is spotty, but I know condensation typically collects on cold surfaces (cold beer) not hot surfaces (exterior of eggduring high temp cook).  Only thing I can think of is that water absorbed into the ceramic and the high heat cooks is driving it out and then it's collecting on the surface.  I. The first picture below, that is not smoke, that is steam as the condensation boils away.

Has this happened to anyone else? Anything I should be worried about?  I keep my egg stored outside with no cover.

  • I am no expert. Have seen this in long and slow cooks when there is too much moisture/water in the egg. Never paid attention at 450 as most of my food burns at that high temp:)

    So far I've only gone this hot for pizza, but also bump up in this range for reverse sears.

    I highly doubt there is moisture in the ceramic itself and you're driving it out. You'd be driving the moisture through the glaze which seems unlikely. I guess it is feasible that there is moisture on the inside that is being driven out though the felt line but that also seems unlikely - more likely to go straight out the chimney. Is this stored exposed outside (no cover - direct exposure to rain)?Lastly - next time you cook, before starting the coals, feel the felt gasket and see if it's wet.

    It happens, look close at your ceramic and you will see little cracks or crazing everywhere. Water seeps in here, boils out when you cook.

    A lot of the ones from Mexico used to do this back in the day, when they were trying to smuggle cocaine into the US by hiding it in the pores of the ceramic.
