Thai Chicken Thighs on the Mini

Followed a Publix Apron's recipe and it turned out really good. Raised direct on the mini around 400 degrees. Might add a little more siracha next time.

hahaha, I have an unseasoned spatchcocked chicken sitting in my fridge right now, waiting for the grill to get hot. Was planning on a simple s&p and herbes de Provence until I saw this. Then I looked at the recipe... fresh basil, fresh cilantro, fresh ginger. I don't have half the ingredients called for, though I usually do. Not even sriracha this time so it'll have to happen another day. It really does look great! Beautiful pics!
I hate it when I go to the kitchen for food and all I find are ingredients!

Thanks! I think you will like the flavor. Next time I might add more siracha for heat. I also only marinated for about 3 hours and next time will do longer if possible.
