The ol' lady sent me a recipe that piqued my interest. I made a mixture of ricotta, parmesean cheese, Italian seasoning, garlic, S&P, an egg and a little red pepper flakes. Put the mixture on the chicken between the skin and meat. A little light coating of Olive Oil on the skin with pepper, garlic salt and Italian seasoning. Smells amazing. Hopefully it turns out just as good.

Well, I married me a wife, she's been trouble all my life,
Run me out in the cold rain and snow -
Only thing I'do to improve is to wrap bricks in foil and weigh down the chicken, cooks faster and keeps it juicer AND cooks faster, the true Tuscan way.....MMx, my not so large BGE
