Italian? Spatch Chicken

The ol' lady sent me a recipe that piqued my interest. I made a mixture of ricotta, parmesean cheese, Italian seasoning, garlic, S&P, an egg and a little red pepper flakes. Put the mixture on the chicken between the skin and meat. A little light coating of Olive Oil on the skin with pepper, garlic salt and Italian seasoning. Smells amazing. Hopefully it turns out just as good. 

Raised direct, 400 until it's done. Finished pictures to follow.
