What's the best way to hold baby backs if they're finished 2 hours early?

I've often put the baby backs on the Egg a couple hours earlier than I should have. So they're done too early. And holding them wrapped in foil under towels to keep them hot also over cooks them. What's the recommended way to hold them? Probably unwrapped, loosely covered, then thrown back on the egg to reheat shortly before serving? Or, what?

  • What td66 said.  Will get you a few hours at least.  Foil Ribs and put into cooler with towels.

I like low oven for ribs.  Loosely foiled if at all.
THANK YOU FOR YOUR ATTENTION TO THIS MATTER
  • I would use an oven set in the 160 - 180 degree range or a warming drawer.  If it is an electric oven, no big need to tent the meat.  If it's a gas oven I would tent them. I must say, I lovz my warming drawer.

With both hands! Actually I have used butcher paper, to wrap them in, placed in a cooler, then stuffed towels to fill up the void. I kept them for three hours, and they were still warm for serving.

Give 'em around 3-5 minutes after coming off the BGE before your preferred FTC.  Will stop the carry-over cooking.

I gave them about half an hour in really loose foil then covered with towels in a cooler for 2 hours. Squirted my vinegar/apple juice/water solution on them before and after, and they were great! Thanks.
