Pork Butt and Strawberry Margaritas

Interesting pairing....the shoulder was on the agenda, the strawberry margaritas were an add on. It was suggested that strawberry picking would be the family activity of the day so I didn't argue. I just got extra motivated when I decided to use the delicious fruit in a cocktail!


8 lb boneless pork Butt from Costco rubbed with Meatchurch Gospel. Set up the egg for 250 with apple wood and headed out the door with the fam.


Great harvest which led to a great margarita! I did forget to take a pic of the creation as they were consumed quickly. Here's the recipe I used (4 drinks):
8 shots tequila
3 shots Cointreau
2 shots simple syrup
juice of 6 limes
2 - 3 cups frozen fresh strawberries
2 - 3 cups ice
blend on high, pour into glasses and enjoy!


Checked in on progress and made a Carolina vinegar sauce. Wrapped at 180 as friends were coming over and it was stalling a bit.



Homemade apple slaw ala Wolfgang Puck. Observations: I kinda liked the juiciness of the wrapped butt and wrapping that late didn't seem to affect the bark negatively. The Gospel is quite a nice little rub in this application. I really enjoy a nice spicy vinegar sauce splash on my pork sandwich. I need to pick more strawberries next time so I can make more rounds!

Did you wrap it and leave it on the BGE? I'm still new to this, and I can never get my butt done on time. I have one on right now, and I'm nervous it's not going to be done in time.
