Got my egg!

Bought my egg yesterday, a large. Got it from an awesome dealer in the Nebraska panhandle.

Put it together with the help of a neighbor today.

At the moment doing a "heat up" to 300F with no food in it, just to watch. My initial observation is the thermometer that came with it is 25F too high because my ChefAlarm is showing 25F less than the egg thermometer...I've got the probe wire dropped down thru the Daisy wheel.

i couldn't really find anything that said you needed to do a burn in or anything, just to keep the first few cooks under 350F. Is there anything else?

    You sound way more patient than me. I got mine 2 weeks ago and the night I got it, I cooked a 12 hour pork shoulder and just learned temp on the fly. I commend you  :)

    Welcome aboard! Each to his own, but dropping your lead wire down thru Miss Daisey is not a good idea in my opinion. Rising/exiting heat thru the dome has more chance to fry your probe wires.  Plus when you open your dome with the wire snaked thru the dome you risk yanking the probe out of the meat...or even if you leave enough slack hanging inside you risk frying the cable. Best bet is to just lay your cable across the gasket and close your dome. There is plenty of give and leakage - if any - is minute. Oh and yes...you might want to check the calibration of your dome thermometer.

    Gotcha. So calibrate by putting in boiling water, and it should read what boiling is at your altitude I presume...about 206F for me IIRC.

    On top of what Ron said above, most people route the probe cable into the Egg so that it is above one of the platesetter legs (if cooking indirect) to protect the cabling from direct heat.

    Yes, I do live at altitude hence my comment. Where I used to live, boiling was 203.

    the interesting thing is that the two thermometers now read the same thing.

    "Equilabrate"? You mean like what this damn metronidazole 500mg I take 3 times a day since oral surgery last week is doing to my body? I swear less food and liquid goes in than what this med rips out of my body at the exit ramp!

    Regarding the dome thermo and the calibration-you've got the process down-use the nut on the back to adjust out any off-set then recheck and you are good to go.

    Agreed! And then while you have that dome thermometer out for testing - turn around and throw that stupid spring as far as you can! Trust me - this weird thing on planet earth called G r a v I t y will keep that thermometer in place!

    I also wrap some heavy duty foil around my wires for the temp probes.  I'm not sure if it is needed...but it makes me feel better.

    I'm going to try that next time...maybe it'll help with the tv reception.

    While you are calibrating the dome thermometer check the accuracy of that ChefMate too. We tend to assume that fancy electronic thermometers are accurate but that isn't always so.
