First Try At Pork Belly Burnt Ends for Fathers Day

I had some pork belly in the freezer so I thought I would try to smoke some pork belly burnt ends. I followed this recipe.

They tastes great, but they didn't shrink and render down like thought. I smoked them for 2.5 hours at 250. I think next time I will up the temp and chip for 3 to 3.5 hours or keep it whole.
I did some beans as well.

You can always smoke for longer until you get the rendering you like before moving on to the next step.Cheers,

What was your finish temp?I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.

Looks great from here. I tried that recipe a few weeks ago and came to the same conclusion. When everyone started arriving and I had to cook burgers I forgot to get a final temp reading. They were 165 to 170 when I put them in the pan to braise. I made them Friday, followed recipe to a T and they turned out great. Most of fat rendered out but not quite all. They were a hit..

Thanks guys, long time lerker first time poster. Got a large and and xl, also a flat rack for big cooks. Nothing beats the BGE, makes me a better cook. Enjoy all your posts, learned alot.
