I don't understand the fascination with these things. Can a fan clue me in?

Welcome to the forum. It's a great addition. Sandwiches, fried rice, quesadillas, anything breakfast related, smashburgers.
I'd suggest a forum search and do some reading on a few of the threads.Phoenix -
The Flat Top Griddle is like having breakfast at an old world diner. You can cook so many different dishes on it that it lends a different perspective on your cooking. Breakfast eggs, pancakes, french toast, fajita's, fried rice. burrito's, burgers hashbrowns, fried potato's and about anything else you can think of that can be done on a griddle.

With the egg and the black stone we hardly ever use our stove or oven.... Everything is better on both.... breakfast, quesadillas, philly cheese steak and more... I've used it a few times tailgating. I don't do much camping but it will be coming with me next time I do. Like DoubleEgger mentions above, it can feed a crowd. I tried to make pancakes on my Egg but apparently my batter wasn't thick enough as it fell right thru the grates.

It's a great compliment to sous vide cooking. You don't have to stink your house up when searing.
It's a breakfast machine.
It's a Japanese steak house machine.
It's a Chinese food machine.
It's a grilled cheese or any grilled type of sandwich machine.
It's a cheese steak machine.
It's a sauteed veggie machine.
I always find that when I BS or Egg cook, the kitchen is cleaner, and doesn't smell of food.
Go ahead, get you one.

Your not alone. I don't get it either.
Where is the love that used to be for the Blackstone Pizza oven. I still use mine 1- 2 times a week.

I struggled with the purchase of a Blackstone also. When Walmart ran the close out on 28" I kept telling myself I would go pick one up. When I finally decided to pull the trigger(after all the fantastic food I had seen pictures of) they were no longer available at any of them in town. I took the hour+ trip to pick one up. The lady of the house told me I was an idiot for driving to get a griddle. Her tone changed on the first cook. Did some fajitas with steak(flat iron) and sliced chicken breast along with peppers and onions and she was in love(maybe not with me that night due to the peppers,onions and tequila) and regularly requests stuff off the Blackstone. I also did a demo for my tailgating friends at Turkey camp this spring and everyone was blown away. I did thin hand sliced Philly cheesesteaks(using prime rib) for 10 people in no time. There are 2 more Blackstone owners due to Turkey camp. The end question is: Are you a full time outdoor cooker are do you just enjoy it sometimes?(I used to shovel my path to the Weber even before I had an egg).
