Crispy Soft Shell Crabs

Every crispy bite reminds me summer is here! 

Picked up from fish market and ready for consumption. 

Soaked briefly in milk and dredged in flour, salt, pepper, old bay, paprika mix. 

Didnt take phone outside by egg  :o  but fried a few slices of pancetta on the cast iron. Direct heat around 450 then added canola oil and fried crabs for a few min each side. 

Toasted some brioche buns, mayo, heirloom tomato slice, Bibb lettuce, plus the pancetta and soft shell. 

The unmistakable crunch of a fried soft shell crab is one of my favorite things to eat!

    A local italian resturant surves those.  I have never thought of doing them myself . I may have to give it a try.  Please tell me what you can eat and not eat.  I'm a noobe when it comes to this.

    Here is an interesting fact that some of you may not know. Blue Crabs do not have an anus. As sad as this is, it is an absolute fact. They are anus free.

    There may be a little truth in that brother Pharmacist, but I just caused numerous folks to Google crab anus =)

    @bucky925, if you look closely you will see that wanasmoke cut the face off. You can also lift up the pointy sides and clean the fibrous gills out.  google how to clean a soft shell crab.   All of the above is really just personal preference for certain less appealing textures. All fine to eat, just texture.

    Yes @NC_Egghead I fried up the pancetta slices on the egg in a CI and then added a bit of canola oil and fried those suckers up!  

    Ive got no more space for pics on my iPhone because I have WAY too many food pics!

    @Wanasmoke - Nice cook! The fried crabs look perfect!

    @bucky925 - the crabs I buy are already cleaned and trimmed and ready to eat, yes, you eat the whole thing.
    Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

    I cut the face off so the aren't staring at me when then hit the pan.
