What is your favorite pork loin recipe

I have a 5# Pork loin to cook today.  Looking for a good recipe.

Open it up and flatten. Add ??? what you like to the middle. Roll up with bacon on outside and tie. 
Add rubs/sauces as you like. 
Easy and very good. 350/400 raised direct gets it cooked.

Pepper and sea salt, inject it with garlic butter and a hint of lime juice.
350* indirect for about 3 hours. Let sit for 15-20 mins after you remove. Slice and serve.

Pretty successful first pork loin.  Ended using bgebrent's basic recipe with sauteed apple on onion stuffing, also added a bit of Dizzy Dust on the outside.  Cooked at 350 with some hickory chips for about 90 minutes to reach 145.  By far the tenderest pork we've ever eaten.  Thanks again to all for the help.
