Sure you can. There's nothing to do. Just trim all of the fat and silver skin off the top, season and throw them on the egg 225F. These cooked for about 7 hours. Those look very tender. I love beef ribs but I have had trouble with a few cooks getting them tender. They would probe tender but not have that fall-apart goodness some ribs have. I wrapped the last ones I cooked and that helped a lot. You guys may have access to higher quality meat than what I'm getting.Coleman, Texas
