Holy Moly!!! Giant Beef Ribs!!!!!

These are amazing. The flavor is so intense on these things. Three different layers of meat have three different textures and flavors. I have never cooked these before. Finally asked my local meat shop for some. They were cutting a whole local beef and I bought them all off the carcass. So glad I did. !!! Thanks for looking at my Tuesday night cook.
I pulled at 180. I have found with my brisket when it gets to fall apart temp it tastes like pot roast. At 180 this probed pretty tender. For my taste it was perfect. I like my pork ribs to be where they bone is clean but you have to bite it off. That's where these were at 180.

For the record- Life is too short for lite/light beer.

I asked for plate ribs. They called them BBQ ribs at the butcher . ?? They were breaking down a whole locally grown cow, so I think they just cut them off without peeling that outer layer off for another cut
