    Beautiful..you got it going on down there in Texas. I bought one to do last night.... but wif was ill, so held off. On a bitness trip tonight....but tomorrow night. I will be joining you on this one. Interesting technique. Will try your method myself.

    The flat iron is one of our favorites. I did pat it dry before grilling to help with the char.

    Thank you. Potatoes were just baked on the egg prior to cooking the steak. Mashed with a fork on the plate and gobbed with good Irish butter, a little parm and sea salt.
