Early morning grocery trip- Pork Butt
Bleary eyed and half asleep, with the sun just beginning to show itself, I went to get milk for the kids. Walking by the meat section I noticed pork butts were half off. Dinner question solved I grabbed a 9lb one.
i have always done butts rub only and wanted to try injecting so quick pitstop by the marinade aisle and saw the Parkers.
For those not from the area, it's a long running well known BBQ spot from Wilson. EDIT- well apparently I wasn't very observant this morning, this is Guy Parker's sauce who used to run the Goldsboro restaurant that closed when he passed. Not sure if any relation to the Wilson Parker clan.
It's a vinegar based sauce but i guessed it would be fine for an injection.
After injection I applied a coffee infused rub and on the egg it went.
As this is for dinner i am figuring 300 should get me done before 6pm. Apple and Pecan for smoke-

Back off the temp. Let it pick up plenty of smoke at low temps. When it hits the stall, wrap it and bump the temp up.

Also, my injected butts tend to finish a bit higher on the IT - a bit below 210. Just an FYI.
If you wrap it, keep it wrapped when it's done and FTC as needed. Then pull it in the foil - it will be super moist."I've made a note never to piss you two off." - Stike -

I'd go with foil, especially if you plan on bumping the temp up.
By the way, the foil will allow the Butt temp to cruise right through the stall. Once it settles in, the temp rise will be nearly linear with time, making the finish time very predictable."I've made a note never to piss you two off." - Stike -
