Paul Prudhomme seafood magic, lemon juice, indirect at 450 for 30-35 minutes. Perfect texture and flavor. First filet on the Egg did not disappoint!

I starting checking the filet with a fork after 25 minutes. The filet is thick so to cook all the way through takes time. But I find the thick cut gives that buttery texture that makes sea bass so awesome. My #1 fish and you did not disappoint. Very nice cook. Like said earlier seems a little long but looks so very good...Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
