Pot Roast. In the Style of Dixie.

Here is my twist on a true "Comfort Food". Pot roast has been a kitchen staple since time immemorial. Served by countless grandmothers for centuries. There is probably more recipes for pot roast than anything out there with the sole exception being anus. Heck, anus can actually be added to this dish to give it that true "Family Feel" if you will. When it comes to Pot Roast there is simply no right or wrong, just add what you like. That's the beauty of it. 
This can be done in a Crock Pot, Dutch Oven, Slow Cooker, Pressure Cooker, or even a plain ole pot. They all work well for the intended task. For the sake of simplicity, I chose the PC. 

Start with a big, nice chuck roast. I prefer chuck over round, but to each their own. 

Dice 1 whole white onion. Just hack it up, it's going to cook down to nothing in the PC. I only chop it to make browning easy. 

In a large black iron skillet, brown the onion. 

In the same skillet, brown the roast. 

Once the onion and roast has been browned, add the following to your PC. 
2 cans cream of mushroom. 
1 quart of beef broth or stock. 
1 stick of butter. 
1 pack of Lipton onion soup mix. 

Stir this well until the soup is dissolved. Don't worry about the butter. 
Add your roast and brown onions and pressure cook for 30 minutes. After 30 minutes open and add carrots, mushrooms and potatoes. Cook for 25 more minutes. 

For seasoning I use the following. 

Use as much or as little as you like. Simply season it to your taste. 
Note: You can season up front or at the end. But when using a PC it's a good habit to save the salt until the cooking is complete.

    Make sure you fill your pressure cooker pot all the way up to the top...much better pressure that way.  Just don't hang out near it when it's cooking.

    Agree. Especially the electric ones. They take the aggravation out of PC cooking. I have all but retired my Crock pot since getting an electric PC.

    Inspiring! But why don't you brown the onions, the meat, and whatever you brown, right in the bottom of the pressure cooker?  I use a 7 quart stovetop PC for that and it sure works for me.

    Most of the time I do. The ole iron pan just happened to be sitting on the stove so I fired it up. Nine out of ten times I do brown in the PC.

    Love the ingredient combination. Looks outstanding. +1 for searing in CI and then adding to the PC. In my opinion, the CI gives a deeper crust flavor. My PC also has a sear function, but it really isn't much more than a braise.

    It's not even close my friend. A pressure cooker will do in an hour or less what it takes a crockpot or slow cooker to do all day. Especially if you have a PC that is running at a true 15 PSI. With that said, even the electric PC's running at around 12 PSI will still beat the crockpot by numerous hours. 
    A lot of times I cook in stages when using the PC. I will do a 2 or 3 part cook. This certainly adds some cooking time but it's still miles ahead of the crockpot anyway you slice it.

    At our house we love pot roast. We call it "Grandma Meat", 'cause that's what you have when Grandma comes to visit. 

    We we don't worry about the time element. It goes in the Pot of Crock before we leave for work. We arrive home to a delectable aroma and roast so tender you could spread it on toast. Never not yummy.
