It's all been covered already. A Thermapen is #1, and for me the Platesetter Woo from Ceramic Grill Store (PSWoo) is my second favorite. You want to take out the heavy (and/or hot) platesetter? Just pick up the handles and lift off. Wear gloves if it's hot. I just set it down on the concrete patio floor, but you have to know where you're going to put it down.Judy in San Diego

You can also spend a lot less for a thermopop than a thermapen. The thermopop reads temps quickly and is good for anything I've cooked on the egg. Lots of folks swear by the pen so if want to spend an extra $75 for a second or two go for it!
