Pork and Beans. In the style of Dixie.

This dish is a wicked twist on the classic "Pork and Beans". How is that you ask? It's far more pork than it is beans. Due to time constraints, I will simply list the ingredients. 
6 large smoked ham hocks. 
2 pounds of smoked split pork neck. 
1/2 pound of smoked, cubed ham. 
1 pound of Conecuh sausage.
1 white onion diced. 
1 bell pepper diced. 
About a good handful of diced celery. If you have small hands, then 2 handfuls. 
Start by browning the vegetables and cubed ham in 1 tablespoon of lard and 1 table spoon of butter. 

Then add a carton of beef broth. 

Now add your necks and hocks. Save the sausage until you add the beans. 


Cook until hocks and necks are almost tender. 
Then add beans. Sorry I forgot to take pics of the beans but it was 1 pound of Amelia's Great Northerns. 
Cook until tender. Then add 1 pound of sliced Conecuh sausage. 

Remember that everything is already done when you add the sausage so only pressure cook for 1-2 minutes after you add the sausage. Let it natural release. Once it does, open it up and season to taste. 
I hope that y'all enjoy this southern twist on pork and beans. I guess it should be called pork, pork, pork and beans. And before anyone asks, you most certainly can substitute anus for any of the above mentioned meats. Or even better, you can simply add anus to the dish as is for a real treat. Thanks for looking.     That's the highest Pork:Bean ration I've ever seen.  Must be 10:1
    Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here.  Very Extremely Stable Genius.

    @SGH Fabulous dish!!!  I saw something about Pressure Cook?  Is this done in a pressure cooker and (silly me) did you soak the beans overnight before adding?

    This looks like something I definitely want to do here at the Flatutorium!!!!

    Brother Fred, allow me to explain if I may. On average, there is roughly 1,500 pounds of consumable meat on a steer, less than 1 pound of that is anus. Even less on a hog. With me working nightshift, anus has sadly alluded me.

    Yes sir, it is done in a 8 quart, Elite, electric pressure cooker. When pressure cooking, you can skip soaking the beans. One of the beauties of a pressure cooker. However you can soak them if you so desire. I find that there is only about a 60 second difference in cook time when it comes to soaked vs nonsoaked beans in the pressure cooker. Thus I skip the soak my friend.

    Ron I actually retired from the SubSea industry several months ago. However I can still answer your question my friend. Spooling, or laying a line on the seabed can be done 24 hours a day. Everything is satellite guided and monitored by Deep Depth ROV's. It can be done in both the light as well as in total darkness with pinpoint accuracy. A line that is going to be laid 8,000-10,000 feet touchdown depth can be laid within 2 feet of its target in total darkness. It's usually even closer.

    For reference, here is a shot of Exxon/Mobil "Julia" mainline being laid. This pic was taken around 2:00am. Look off in the background and you can see that it is pitch black. 

    PLET depth was 8,000 feet and 2 inches.

    I don't mind you asking at all my friend. I'm doing some independent (3rd Party) Pressure Vessel Inspection or Fixed Equipment Reliability (API) work.

    It is used to break heavy hydrocarbons into lighter ones. Example; crude oil into gasoline and other end products.

    I do. This one in particular makes finished Jet A-1 fuel.
