Game day wings and homemade chuck burgers.

So I did not go to any party yesterday, but made wings and hamburgers.

Dried in the fridge overnight:


Cooked (looks burnt, but were not)


Burgers:
Started with two chuck roasts


When trimmed I found that they were well marbled


Put in the freezer to firm up with grinder parts:


Remembered I had some bacon leftover from breakfast:


Why not grind together? 








Topped with more bacon, Swiss cheese, red onion and a side of tater tots:


Not it the best burger I ever had, but certainly not the worst.

    Very well done brother ski!  And tater tots!!  Some time try grinding a brisket for burgers.  I know, sounds sacrilege but try it.  Next level for me.  Great job!

    I was thinking of doing that sometime soon. I assume you add beef fat to boost the fat content seeing that the flat is so lean?  Not sure I could grind the point..... so many better things to do with it than grind to burgers.
