Ribeye Roast Retreads
We did a boneless Ribeye Roast on the LBGE at Christmas. Boy was it good. With just the two of us we had plenty left over, so I wrapped it well and froze it. I figured we'd do something good with it.
So I thawed it and just before the game Sunday I sliced it up paper thin. Once I had my peppers and onions sauted and nicely caramelized I added a big batch of meat and a little beef stock to the pan. After a short simmer I added Havarti cheese. Voila - Philly Cheese Steaks. Some kind of yummy! The best part is I still have enough sliced beef for another batch.
