Ribeye Roast Retreads

We did a boneless Ribeye Roast on the LBGE at Christmas. Boy was it good. With just the two of us we had plenty left over, so I wrapped it well and froze it. I figured we'd do something good with it.

So I thawed it and just before the game Sunday I sliced it up paper thin. Once I had my peppers and onions sauted and nicely caramelized I added a big batch of meat and a little beef stock to the pan. After a short simmer I added Havarti cheese. Voila - Philly Cheese Steaks. Some kind of yummy! The best part is I still have enough sliced beef for another batch.

Sounds like a great use of leftovers!

Love the alleged repurpose. Zero pictures.....did it really happen? Just kidding, of coarse. Great idea.

Sorry about the lack of pictures. I'm just not one to take photos of everything I cook. I'll try to do better  :)
