Very nice. I still have some rib cap medallions from Flannery. Made one tonight for the wife along with a Flannery 24 oz dry aged Porterhouse for me. She likes them, but still prefers a filet. I cook them whole and tied up - reverse sear just like with any other thick cut. Comes out perfect.

Super job @Hntnhrd. Costco here in CA sells them in strips and hot and fast they're outstanding. Never worried about Costco's tenderizing, maybe I should have but been buying it for years so probably not going to start.LBGE - I like the hot stuff. The big dry San Joaquin Valley, Clovis, CA
