Forgot I had these pix. Whipped up this chili a coupla weeks ago using a 2.5 lb chuck roast. I grilled the steak over a bed of JD whiskey barrel wood until it was well done and until the smoke set in, then pulled it and diced it up for the chili. Then simmered it for a couple hours, covered in the DO. Had some onion sausage in there too. The smoke stood out pretty well and the steak had great texture in the end.

My dog thinks I'm a grilling god. -
Would it be better to low & slow the meat to maximize the smoke, or is that just a waste of time? I was thinking of trying this with a hunk of top round, but I'm worried it'll turn into leather. Yours looks terrific.

Thx y'all! @Kayak, I've done it that way too. This time though, I was wanting small hunks of meat for texture purposes instead of pulled beef. The texture was really good. And very tender after it simmered for a couple of hours.
