Well, it's time for Reuben 's. I soaked 2 corned beefs for a couple of days to remove the salt. This morning I applied pepper, coriander, garlic and onion. Put on the egg at 225 indirect.
Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.

Looks great. I feel like you're discreetly pressuring me to buy a meat slicer.

Looks good. I've only done 1 pastrami, and I did it from scratch. I picked up a corned beef to do this time, decided to cheat a little. How long did it take to cook?I'm in Fredericksburg, VA, and I have an XL and a medium.

I think about 4 hours. I did wrap at 155. I wanted to keep the moisture in. I pulled it at 198 .Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.
