Tales From The Dark Side - I Made KJ Smoked Chili

Here's the recipe. Sorry for the picture quality.
I started with a 4 pound chuckie, cubed and seasoned with DP Cow Lick.
After I smoked them with apple chunks for about 75 minutes, I added them to the dutch oven with all the ingredients. Yes, you Texans! Those are kidney beans!
Pulling it off the egg.

Thoughts on the dish: I liked the smoke which is always good with chili. I wanted to try this recipe because it looked pretty simple and that it didn't look like it would tilt the spicy meter for Wilma. It did because I substituted Rotel for the tomatoes. The recipe was also a bit of a one-note wonder as well. And to think I wasted Four Roses Bourbon instead of the King of Beers I was drinking! Bottom line is the meat and cooking procedure was good, but the rest needs some tweaking. Meh.

It looks great from here Fred. One thing I have found is that switching the brand of chili powder can make a big difference. I really like the Carol Shelby chili kit. I basically use the recipe on the box with the optional suggestion of substituting a can of diced tomatoes for water and add chopped onions/peppers and I use leftover smoked brisket for the protein.
Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
