Spicy Roast Parsnip Soup

Whilst I've been away with work, SWMBO has finally got some time in the kitchen. She made this delicious and healthy roast parsnip soup, infused with flavours of cumin, turmeric and garam masala.
Recipe is here:

OK so not cooked on the Egg (although you probably could do this with a Dutch oven) and it is vegetarian, but still super, and warming for a cold winter night.

This looks great! My mom did a butternut squash soup for Thanksgiving with a similar flavor profile. Stick-to-your-ribs good.

Love it. Never had parsnips until I was married, they weren't a thing in my family growing up. I'll be borrowing this for sure.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Same here, SWMBO introduced me to them. I kinda think it would work well as a side with pork chops rubbed with Tsunami Spin, will try that out at some point. Unless you do first ofcLegume said:Love it. Never had parsnips until I was married, they weren't a thing in my family growing up. I'll be borrowing this for sure.
