New Smokeware temp gauge low by 80 degrees?

Are these temperatures being taken from the same spot or is one being taken from the Dome and the other is being taken from the grate level?XL bge, Mini max & 36 BS Griddle.

Put the tips in a boiling pot of water, should read 212.

Your always going to have 2 different measurements from grate and dome.
bring a pot of water to a rolling boil. Get a pair of needle nose pliers and stick the probe into the water by utilizing the pliers so you don't burn your damn hands.. do this for each of your thermometers so you can get three different reasons.. obviously do this one at a time . you should read 212° +\-..XL bge, Mini max & 36 BS Griddle. -

Temps from grate and dome come closer as a low and slow progesses.
Grate on mine run ~50deg hotter than dome for a few hours.I would rather light a candle than curse your darkness.

Cook to one or another with temp.
I always cook to dome temp unless I use my Flame Boss for a long low and slow cook. There is always a difference in dome vs FB temp, but I go with the FB temp for the cook and ALWAYS go with meat IT.
For all cooks, we're aiming for meat IT for to check for doneness. This is the true temp to use.Living the good life smoking and joking -

So you can calibrate the smokeware thermos? I just got mine last week and I noticed that it has a little nut behind the head but everywhere I've read it says you cannot calibrate them and I don't want to go turning them if I don't have tobhedges1987 said:

Mine is 10 degrees off in boiling water. Wasn't successful in turning the nut. I just adjust by 10 degrees...

Your overthinking this 50-60 degrees hi or low will have very little effect unless your trying to keep a low temp like 225 for an overnight low and slow.
Back when I was new at Egging I was to critical about temp, always chasing it to keep it at an exact temp like 250. Now if it settles in at 260 dome temp or 240 I don't care because if it's high it's going to cook faster if low it's slower. I never know what the grate temp is I just use dome temp. Hope this helps.

The older SW thermos could be calibrated, the newer ones can't be.
Remember to account for the elevation you live at, since the boiling point of water is 212°F at sea level.

I got my new smokeware Thermo last week due to the special that they were having and I haven't used it one time but I decided to do a water boil test since this topic in the red came up. Add a full rolling boil I was looking at 160°.
Stuck my Thermapen in the water it read 211. Stuck my DOT thermo in the water it was reading 211 as wellXL bge, Mini max & 36 BS Griddle. -
