Broke down finally on not eating fried food at home and bought the T-Fal frier. Damn SGH! Dont need a truck sized one, at least yet.
Anyway new to deep fry and wand a lil hand on what to do to justify the purchase in the eyes of the spouse and fam.
I enjoy spicy fried chicken sandwich from.... chick fil a or i hop or other good southern places.

In my humble opinion, there isn't really a need for a deep fryer unless you're planning on cooking for a bunch of people. I typically fry stuff weekly (I know it's not healthy), and use a simple skillet and oil for pan frying. You only need enough oil in the pan to cover half the meat. Usually 5 min per side twice flipped, 20 min total for chicken, at 350 deg f to reach target IT. Less time for pork chops.

And for a good fried chicken sammich.... Dredge meat in flour, then in egg wash or buttermilk, then in panko bread crumbs. Then fry. Toss in buffalo sauce at the end if desired. A brine of pickle juice will give you a chic fil a taste.

Flour and Swamp Venom, 1:1 for the dredge. Dip in egg wash (beaten egg and Franks), about 3:1 ratio. Panko for the breading. Mix some more Swamp Venom with the panko if you are some kinda masochist. You can fry, either deep or skillet, but a good indirect roast at 400ºF will not "wash away" the spices.
Chicken breast hit with the Jaccard or flattened cutlet style works best.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad! -
