Fried a 23lb Bird!

Options
Thanks to @SGH and his advice I was able to successfully fry this large turkey. I injected with a butter & spice mixture and rubbed with more butter and Plowboy's Yardbird rub. I used a 50/50 mix of Peanut and Corn Oil (I needed 70lbs oil for this and couldn't find a second thing of peanut so I had to improvise). I also had to use a 62 quart fryer to fit the turkey in there comfortably. I let the turkey come to about 55F (in water) before frying and I kept the oil just below 300F. About 4.5 minutes per pound until we got to temp. Tasted great!  So good!  I was so eager to carve I forgot to take a pic of the finished turkey. My bad.
