Another Rib Roast Cook

Looks like I wasn't alone in opting for beef over turkey. In laws brought a Greenberg turkey so I cooked a rib roast. Bought a 3 bone rib roast (for DFW eggheads, bought it at Rudolphs in Deep Ellum. Great butcher shop)

In the raw. 


Salted it Tuesday night


I wanted a good sear, but I also wanted a good, herby exterior. Decided to sear with just the salt, refrigerate overnight, then apply a garlic/thyme paste a few hours before the cook. Here's the sear:


Rubbed with herb paste, cooked at 250 until IT of 125. Rose to 133 after I pulled it. This is right before I took it off.


Sliced and ready to eat. Fun cook!

    I didn't sear the fat cap, just edges and part of the ends.
